Raw Shellfish Risks
Consumption of raw or undercooked shellfish, including oysters, carries inherent risks of foodborne illness. These risks include but are not limited to:
- Vibrio vulnificus and Vibrio parahaemolyticus — bacterial infections that can cause severe illness, particularly in individuals with liver disease, diabetes, compromised immune systems, or other chronic conditions. Vibrio vulnificus can be fatal.
- Norovirus — a highly contagious virus that causes gastroenteritis.
- Hepatitis A — a viral liver infection that can be contracted through contaminated shellfish.
- Naturally occurring biotoxins — including those that cause paralytic shellfish poisoning (PSP), diarrhetic shellfish poisoning (DSP), and amnesic shellfish poisoning (ASP).
Individuals who are pregnant, nursing, immunocompromised, elderly, or who have liver disease, cancer, HIV/AIDS, diabetes, or other chronic health conditions are at significantly elevated risk from consuming raw shellfish.
