Buying
How do I buy caviar without getting ripped off?
Buy on species, farm, and production date rather than on grade names. A legitimate tin names the species (Acipenser baerii, Huso dauricus × schrenckii, and so on), the producer, the cure, and a lot or CITES code. Grade words like Royal and Imperial are unregulated and mean only what that one producer decides they mean.
What size tin should I buy?
A 30 g tin serves one person as a course or two as a taste. 125 g comfortably serves four as a course. Larger tins cost less per gram but only pay off if you finish them within a day or two of opening.
Is caviar bought online any good?
Yes, if it ships overnight on gel packs and arrives cold to the touch. Caviar is damaged by temperature, not by distance. Refuse or report any delivery that arrives at room temperature.
What is the best caviar for a beginner?
Farmed siberian sturgeon (baerii) or a kaluga hybrid. Baerii is the least expensive real sturgeon caviar and is clean and nutty; kaluga hybrid gives the large-grain experience without beluga pricing.
Is caviar a good gift?
It is, with two caveats: it needs cold-chain delivery, and the recipient needs to be home to receive it. Pair a small tin with a mother-of-pearl spoon rather than buying a larger tin without one — the spoon changes the taste more than the extra 20 g does.
Taste and quality
Why does my caviar taste fishy?
It is old, it has been stored too warm, or it has been open too long. Fresh, well-handled caviar tastes of salt, cream, and cold sea — never of fish.
Why is some caviar golden?
Lighter roe generally comes from older fish, and in albino strains from a genetic absence of pigment. It is scarcer, so it is priced higher. It is not automatically better: a dark ossetra from the same farm and harvest is frequently the better tin.
What does "malossol" on the tin mean?
Russian for "little salt" — a cure of roughly 3–5% salt by weight. It is the premium standard, and it is why the tin is perishable and must be held just above freezing.
Should caviar eggs pop?
Yes. A clean pop with an intact membrane is the mark of good handling. Eggs that smear, weep, or collapse have been frozen, over-aged, or crushed.
Is pasteurised caviar worth buying?
For shelf life and travel, yes. It keeps for months sealed. The trade-off is a softer grain and a shorter finish, so it is the practical choice rather than the pleasurable one.
Serving
How much caviar per person?
15–30 g each as part of a spread, 50 g each if caviar is its own course.
Do I need a mother-of-pearl spoon?
Use anything non-reactive — mother-of-pearl, bone, horn, glass, or gold. What matters is avoiding silver and stainless steel, which give the roe a metallic edge.
Can you cook with caviar?
Never heat it. Salt-cured roe seizes and turns bitter. Add it off the heat at the last second — onto scrambled eggs, a finished pasta, a warm blini, or a chilled potato.
What do you serve caviar on?
Blini with crème fraîche, unsalted toast points, plain boiled new potatoes, or thick unsalted chips. Mild starch and mild fat. Skip lemon, onion, and chopped egg with a good tin — they exist to hide a bad one.
Can you serve caviar at a dinner party in advance?
Open it at the table. Caviar exposed to air for an hour before guests arrive has already lost the finish you paid for. Keep the tin on crushed ice and open it in front of people.
Storage and safety
Can I keep caviar in the fridge door?
No. The door is the warmest part of the fridge. Caviar wants −2 to 0 °C, which in a domestic unit means the back of the bottom shelf.
How long does caviar last once opened?
One day is the honest answer, two at a stretch if the surface is pressed flat and the tin resealed and kept very cold. Do not go past three.
Is caviar safe to eat raw?
Caviar is salt-cured and ready to eat, not raw in the sushi sense. It is still an unpasteurised refrigerated food, so people who are pregnant, immunocompromised, elderly, or managing chronic illness should speak to a healthcare professional first. Pasteurised product is the lower-risk option.
Is caviar healthy?
It is high in omega-3 fatty acids, protein, vitamin B12, and selenium — and very high in sodium and cholesterol. In the quantities anyone actually eats it, it is a treat rather than a nutritional strategy.
Does caviar contain a lot of salt?
Yes. A 30 g serving of malossol caviar carries a meaningful share of a day's sodium. If you are managing blood pressure, treat it accordingly.
Legality and sourcing
Can I bring caviar through airport customs?
CITES allows a personal exemption of up to 125 g per person for most sturgeon species, but national rules override it — US sanctions on Iranian goods and EU sanctions on Russian goods apply regardless of quantity. Declare it and check before you fly.
How do I know my caviar is not mislabelled?
Buy from a named farm with a CITES lot code on the tin. DNA studies have repeatedly found double-digit species-mislabelling rates in retail caviar, and price is the usual tell: prestige species at a modest price is the classic sign.
Is any caviar still wild-caught?
Very little. Commercial wild sturgeon fishing is banned or defunct across the Caspian and Black Sea. A few regulated North American fisheries — hackleback, paddlefish, bowfin — remain legal and state-managed. 38 of the 44 varieties indexed here carry a CITES Appendix II listing.
Is vegan or plant-based caviar a thing?
Yes — usually seaweed or kelp pearls spherified with alginate. They copy the pop and the salt and none of the fat or umami. Judge them as their own garnish, not as a replacement.
